Susan Del Castillo

Susan Del Castillo, age 70 of Cottage Grove, passed away peacefully on April 18, 2021.

Susan was born February 2, 1951 in Bremerton, Washington and moved to Wenatchee, Washington where she graduated high school in 1969.  Susan went to Logan College of Chiropractic in Chesterfield, Missouri where she received her Doctorate of Chiropractic.  Susan moved to Minnesota in 1977 where she started her own chiropractic clinic in Cottage Grove.  She was married to Daniel Del Castillo and they enjoyed over 20 years together.

She enjoyed shopping, swimming, trips to Costco with her grandson Dominic, gardening and reading all kinds of mystery stories.  Her faith was a center point of her life and carried her through so many situations throughout her life.  In her younger years, her dad taught her the finer skills of baking and was known for her banana bread and a peach upside down cake.  Out of all of the things she enjoyed in life, her passion was her children and grandchildren.  She was the type of person who was committed to going out of her way to care for people at all times throughout her career.

Susan is survived by her children Signe (Brett), Alison (Shane), Laurie (Brian), Matthew (Amanda), Danielle (Brooke); grandchildren Norelle, Sullivan, Micah, Savannah, Mataya, Madison, Jacob, Dominic, Trey and Waylon; loving cat Gabriel; siblings Mike Schafer, Laurie (Mark) Wade, Erving (Lori) Arkills; aunt Lorraine.  Susan is preceded in death by her husband Daniel Del Castillo; parents Harry and Esther as well as brother Jerry Schafer.

Visitation will be 4-7 pm, Thursday, April 22, 2021 at Kok Funeral Home, 7676 80th Street S., Cottage Grove.  Memorial service will be 11 am, Friday, April 23, 2021 at Crossroads Church, 7955 Ivystone Ave. S. Cottage Grove.  Private interment Ft. Snelling.  Masks will be REQURED while in the facility at both events.
